Arugula Salad with Strawberries and Balsamic-Shallot Vinaigrette

Salad ingredients:

  • 1 tbsp pine nuts
  • 1.5 cups arugula
  • 1/2 cup romaine lettuce chopped
  • 1/4 cup sliced strawberries
  • 1 tbsp feta or goat cheese (optional; I left this out of course)

Vinaigrette ingredients:

  • 1 tsp olive oil
  • 1 tsp balsamic vinegar
  • 1/2 medium shallot, sliced thinly
  • pinch each salt and pepper

Directions:

  1. Toast pine nuts in a small skillet over medium-low heat until they start to get brown, about 5-7 minutes. Shake the pan around every once in awhile and don’t let them burn!
  2. Meanwhile, mix together dressing ingredients in a small bowl and set aside.
  3. Layer your salad in the following way: romaine lettuce, strawberries, pine nuts, dressing, and cheese (if using). (you can let the nuts cool first, but I was impatient).
  4. Serves 1. There isn’t a lot of dressing here, so use more oil/vinegar if you like more dressing.
